WINE OF ORIGIN – SIMONSBERG, STELLENBOSCH
Our Sauvignon Blanc was hand-picked and vinified from a selection of rows out of top-performing dry land blocks of vineyards on the farm. A part of the grapes were harvested earlier to preserve the natural acidity and green flavours.
Grapes were hand sorted, crushed and gently pressed. Settling was done over two days to extract loads of thiols. Alcoholic fermentation was done at a low temperature and racked after two months of lees contact. The wine was stabilized and lightly filtered before bottling and then labelled.
On the nose: Pineapple and Grapefruit. Taste test: White pear, ripe pineapple and Litchi upfront with a lovely green asparagus on the mid pallet. Food Pairing: The acidity and fruit on the wine will complement most white meats. The wine will also pair well with Fish, Sushi or even Oysters.
